Ingredients:
1 kg organic, grass-fed beef bones (marrow bones are the best choice)
2 carrots, roughly chopped
2 celery stalks, roughly chopped
1 onion, roughly chopped
2 cloves garlic, crushed
1 tablespoon apple cider vinegar
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
10 black peppercorns
2 bay leaves
Filtered water
Directions:
Preheat oven to 200°C (400°F).
Place the bones on a baking sheet and roast for 30 minutes or until lightly browned. This step helps deepen the broth's flavour.
Transfer the roasted bones and vegetables to a large pot or slow cooker.
Add the apple cider vinegar, herbs, peppercorns, and bay leaves.
Cover the ingredients with filtered water, ensuring everything is submerged.
Bring to a boil, then reduce heat to low and simmer for 24-48 hours. Longer simmering times extract more nutrients from the bones.
Strain the broth through a fine-mesh sieve and discard the solids.
Allow the broth to cool slightly before storing it in airtight containers in the refrigerator or freezer.
